Long Weekend

I feel like I’ve been running around like a chicken with my head cut off lately, and I’m sure I’m not the only one feeling like this either. Spring always makes me a little crazy around my house, ‘spring cleaning’ everything (which drives Curtis nuts, especially when I try and do it all at once instead of room by room) as well as trying to get assignments and requirements done so I can graduate in precisely 45 days and 1 hour.

While it has been crazy for me lately, we just had the loveliest long weekend that was wonderfully rejuvenating because I decided to doย nothing.ย I didn’t do laundry. I loaded the dishwasher one time. I avoided homework on Sunday. It was glorious!

Naturally, I spent my downtime reading for pleasure and watching the Harry Potter marathon that was on all weekend (I’m an admitted Harry Potter nerd, it’s why I have a Pinterest account). Again, glorious!

Anways, that was my weekend. I want to pass on a little phrase that caught my eye last week:

“Everyone you meet is fighting a battle you know nothing about. Be kind. Always.”

This really struck home with me because kindness is something I struggle with while working in customer service. Oftentimes I am on the receiving end of rude behavior from others, and I often find myself holding a grudge against that person and then passing along the rudeness unintentionally to someone else. I am not trying to excuse rude behavior by saying there is always a reason for it, but on the chance that the person in question is having a terrible day, I think that returning unkindness with kindness may change that person’s day for the better…and in the process it might just change the way I walk away from the situation. That whole, ‘Do unto others’ thing- ๐Ÿ™‚ It really changed my attitude, which can get pretty crummy at work sometimes.

Anyways, have a wonderful week-

Read a book.

Relax a bit.

And be kind, even when you don’t want to be, and see what it does.

School is OUT!

It’s FINALLY OVER! Finals have all been taken, papers turned in, books returned, and barely 24 hours have passed!
I celebrated this wonderful end of the semester by driving up to Ripon so I can babysit my beautiful niece, and it turned into a lovely afternoon! I got to visit with my friend Jess who just returned from a six week mission trip to Africa!! It was so wonderful to hear how God used her there, and some of the stories she had made me want to go! Maybe in the next few years ๐Ÿ™‚
After catching up with Jess, I literally dragged M shopping. She whined almost the whole way until we got into the dressing room and she remembered that she does, in fact, enjoy it. ๐Ÿ˜‰
THEN my momma and I had a mother/daughter date night! M already had plans for the night, so she thanked me ever so much for making her go shopping and headed home.

Mom and I grabbed some Chinese food from New China (hands down best chicken chow mein, deep fried green beans and BBQ pork ever), some redbox movies (Pitch Perfect was awesome!!!) and some candy before settling down to relax. It was delightful.
And now, as I lay down, I find myself at a loss…before I fall asleep I am so used to blocking out my schedule for homework and work and school and housecleaning that I can’t get out of the habit!
I think I might sketch a bit….maybe read something good…..come up with some ideas on dating my hubby…..or just do nothing for one hot minute.
So happy to be back.

Gabriella’s day at the zoo

If I were to explain from Gabby’s perspective how her day at the zoo was, she would say, “We went where??”



The cutie pie slept the whole entire time! Except for when we were in the reptile house… we think she may have glimpsed the poisonous dart frogs when we walked through, so for now, we have deemed the poisonous frog her favorite animal. (We need another zoo trip so we can change that…)



It was nerve-racking at first to go somewhere that seemed so far away with Gabby, but we’re so glad we did! It was such a fun time for all of us. Unfortunately, Joey had to work so he missed out but we are already planning our next outing to the Oakland Zoo.



The above picture is probably the best photo to describe how the day went- Grandma was off in her own little world with her granddaughter and the rest of us trailed behind, trying to keep up!





We grabbed lunch at the Lemur Cafe on the zoo campus and that ended up taking a big chunk out of the time we had at the zoo! Long lines= no bueno. However we grabbed our clam chowder bread bowls, and enjoyed a little time off of our feet!



As you can see, I’ve converted all my sisters into Camelbak believers. Have you gotten yours yet?

Anyways, we really had such a great time altogether! I absolutely loved experiencing the zoo with my daughter, and I can’t wait until she’s older and she can see all the different animals and we can see her reaction- Joey and I both think that vacations will be twenty times more fun now- harder, yes- but so much more fun to watch Gabby take everything in.



Also! You guys won’t believe this, but…



Gabs saw her first unicorn at the SF Zoo. In fact… we all did.

Ok, it wasn’t a unicorn. The poor guy lost one of his horns, but according to lore, he meets all the storybook criteria of being magical!

We’ll take it!




After walking all day, some of the crew was pretty exhausted on the way home.



Both Gabs and Linds were fast asleep the whole way! I was stuck in the back with these party poopers, so I just talked with mom and K on the way home ๐Ÿ˜‰

Now we are enjoying a relaxing day at home and thinking its time to bake some goodies… We’ll be back!

Roasted Pepper and Garlic Hummus

Spring Break is herrrrrrre!! And I have been looking forward to it since about the 4th week of January. No concrete plans so far…. except younger sister Lindsey’s 18th birthday dinner tomorrow!! I can’t believe she’s 18 already. I’m just not sure I believe it yet. An 18 year old sister and a month old niece!!! Holy ridiculous batman.

I spent most of the morning on my first day of vacation in an interview (in front of a panel of 5 people! Never done that before- nerve racking, let me tell you) for an internship for next year, so by the time that was over I was definitely ready for some relaxing time in the kitchen instead of my current bad habit of fast food. YUCK!! I hate how easy that habit is for me to fall back into. Since I’ve been trying to eat more veggies, I like having a good dip to go with them, and I was so surprised at how easy it is to make hummus!!


And it looks quite pretty ๐Ÿ™‚

While I was making this, I also made Tuna & Salmon Salad Sandwiches and a Spicy Chicken Dip that you’ll have to wait for ๐Ÿ™‚

See what happens when I decide to use my spring break for fun stuff? ๐Ÿ™‚ I made a conscious decision to take a step back from school since I’m caught up on homework and spend some time reading and cooking and crafting.

It’s doing wonders for my stress levels! And eating habits :/


P.S.ย Anyone else get the giggles overย M’s storyย yesterday? I did. I really shouldn’t laugh too hard, cuz someday I know I’ll find myself in a similar situation.

Roasted Pepper and Garlic Hummus

**Adapted from What Katie Ate’s Recipe for white bean, chickpea and roasted garlic dip.**


5 Large garlic gloves, unpeeled

1/3 cup EVOO

1 can 14 oz chickpeas (garbanzo beans) rinsed and drained

1 can 14 oz cannellini beans (white beans) rinsed and drained

juice of 1 1/2 lemons

pinch crushed red pepper flakes, plus extra to serve

S & P to taste

1 TBSP grated Parmesan cheese

1/2 of one roasted red pepper- (I used some from a jar, you don’t have to go crazy and fire roast your own ๐Ÿ™‚ )

Preheat the oven to 400. Place the garlic on a baking sheet and roast for about 30 minutes until soft. Remove and allow to cool, then squeeze out the soft flesh and discard the papery skin.

Place the garlic in a blender with the chickpeas, cannellini beans, lemon juice, red pepper flakes, olive oil, parmesan cheese and red peppers. Blend it all together to combine, then season to taste with S & P (I used quite a bit). The texture should be thick and slightly grainy. If you like it smoother, add small amounts of EVOO until it reaches the texture you prefer.

Let it chill in the fridge for about 30 minutes before serving, then garnish with more sliced roasted red pepper and S & P.

Merry Christmas!

I hope everyone had a wonderful Christmas! I know we did- lots of games, a walk with mom’s dog, really really good food, and a healthy dose of family ๐Ÿ™‚

Road Trip!

Guys, I’m way too excited to sleep. Tomorrow, I’m taking my baby sister (she’s a senior in high school) to a college visit at Chico State University!! I feel totally honored that she would be okay with her dorky pregnant sister walking around with her on a college campus. Ill try not to say too many embarrassing things for her sake. The only thing that would make this trip even better than it already is would be if K could come too! She had to work though, so this task of watching over our infant sister falls to me.

Being that I have to wake up in 5 hours to pick her up, I should prob be asleep by now. But counting sheep just isn’t doing the trick, so to make myself more tired, I just got up and put together some snackies for the road! Gotta have snacks on hand at all times, dude. It’s a must.


Apple chips (only ingredient is apples!!) sour cream & onion smartpop, chocolate covered pretzels, dried mangoes, Dijon almonds, fruit and granola bars!!

I’m a nibbler on the road, so I come prepared.

Well I really need to focus on some shut-eye, so pray that the visit goes well tomorrow and that it helps Linds narrow down the choices for college! Also for safe driving. Lord knows I need that prayer, geez.

I’m pretty sure I’m putting more thought into where she’s going to college than where I did! I printed off like 30 pages of info on the school earlier today so I could sound smart to her on our drive there. Lets see if she falls for it.

Wow, this summer has been so busy! Several vacations later, I am finally resuming a (somewhat) normal life again. I got to go to Disneyland with my mom and two younger sisters (M wasn’t able to make it ๐Ÿ˜ฆ ), got to go camping for a few days with Curtis’ family, and got to take a few day trips here and there. I also just started a new job, so this has been a very full, exciting summer! Here’s a few photos ๐Ÿ™‚

We got to have breakfast with the Princesses on our second morning! It was magical….Belle is my favorite (does is have anything to do with the fact that the Beast gives her a library? I don’t know. Maybe.) and she was so amazing! I jumped right out of my seat when she came over and she said she could tell she was my favorite (ha! lol) and asked if I had ‘a Beast of my own’! Love her!

There’s a little peek at our trip….we had a fantastic time!!! Unfortunately, I did not take photos of any of the yummy food we snacked on during our line-waiting and photo taking, such as the churros, the frozen strawberry lemonade, kebabs, jalapeno cheese filled pretzels….yeah not the healthiest outing we’ve had, but delicious nonetheless.

Speaking of food, I’m trying to get back in the habit of making dinner. Summertime schedules don’t jibe with consistent cooking for me. :/ Oh well.

Back to the real world!
