While I never really developed any artistic ability, I do want to give Gabsy a fighting chance. And even if she’s not terribly artistic either, we are always up for painting. Especially the kind of painting where it’s messy and edible.

It’s much easier for Gabs to paint than draw right now, since she has more interest in eating the crayons/colored pencils than color on paper. So we combined her two interests (putting things into her mouth and smearing food) into yogurt painting!

I didn’t come up with this idea (PINTEREST, as per usual) but the original momma used cool whip instead of yogurt. We had greek yogurt in the house so that’s what we used! Besides the yogurt being chilly, it was a blast for both of us. We spent about an hour covered in breakfast, then another hour of Gabs splashing in the kitchen sink.

Can’t wait til next summer when sidewalk paint happens!

{yogurt + food coloring= body paint} ** after a quick google, I read that Greek yogurt is awesome to use because it’s strained much more than regular yogurt so it’s a little easier on the baby digestive system than cool whip or any old yogurt. Having said that, babies are tough and can probably handle a tablespoon of any of those options, since that’s all that Gabs really tasted. She was too busy painting me. 🙂

Hangry

How is it that I have time to feed a newborn 8-10 times a day but hardly manage to fit meals in for myself?

11:15 First meal of the day- toasted muesli, frozen bluebs/Raspberries/blackberries, plain Greek yogurt

snack: Dried Strawberries ( I deem this recipe a Pinterest fail. After 3 1/2 hours in the oven, these were still not chewy and dried like the recipe made it sound! These would probably need 8-12 hours at 210 degrees, with the door cracked open to let the steam out.) Still kinda tasty though!

My hair appointment went pretty well yesterday- got my hair chopped!! Leaving Gabs was hard, but I left her in the care of my mom (who happens to be a pediatric nurse, and conveniently studying Pediatric Advanced Life Support with me ) and I figured babysitters don’t get much more qualified than that. Gabby slept the entire time I was gone, making me feel like I didn’t miss too much of her sweet little life while I was gone- whew 🙂

As if leaving her once wasn’t enough, we ended up making some last minute plans with some close friends to go out for dinner to one of our favorite restaurants to celebrate a late birthday/end of grad school classes/brother being home- meaning we utilized my mom as a babysitter AGAIN… twice in one day. We were only gone 2.5 hours, but this time I cried when we left her. We had a great time going out (I enjoyed my first glass of wine in almost 11 months AND we got free dessert because our waiter threw away my *two bites* of leftovers I had asked them to box up- SCORE!) but I had a hard time getting my mind off of getting back to Gabriella. Again, she slept the whole time we were gone- seems like she didn’t miss us too much! Afterwards, we picked her up and then continued on to game night at our house!

Back to today.. More studying, naptime, then a walk! Gabs loves the jogging stroller, which makes me a happy momma!

English Muffin French Toast

Before I get to the good part, I need to take a step back and talk to you about a few things. Have a little heart to heart.

Don’t be nervous, this is all on me. It has come to my attention that I have developed a nasty habit of ‘mentioning’ recipes, promising to ‘get back to you’ about them, and totally NOT getting back to you. It’s amateur hour over here, folks. Anyways, next week will be a redeeming blog week and I’ll make sure to get all of those to you! I’ll start by adding (today) the bomb-diggity Oliebollen recipe that was given to me by a dear family friend. This is her grandma’s special recipe that has been handed down the generations– so I hope you try it and treasure it! I wanted to get her permission before posting it to the Internet, of course. In her words, “My grandma would be honored!!”. I felt honored she would share such a special recipe!

Moving on! This morning I was about ready to default to the usual yog/bluebs/cereal bowl that has been my breakfast for ages- but then my eyes rested on a lonely english muffin that was sitting by our toaster. And I remembered that we only had ONE egg left in the fridge… all this lonely food in our house! Ah-HA! My mind jumped immediately to an idea I saw somewhere… but can’t remember where, so if this was your idea, let me know so I can give you credit!

I give you: English Muffin French Toast.  It truly is ten times better than plain ol’ french toast. So good in fact, that I may or may not have licked my plate clean.

English Muffin French Toast

serves one

Ingredients

1 english muffin, separated

1 egg

1/4 cup milk

1/4 teaspoon cinnamon

1/4 teaspoon maple extract

 

Plain Greek yogurt for topping (optional)

Syrup for topping (optional, or use honey)

Directions

In a small bowl, whisk together the egg, milk, maple extract, and cinnamon. Separate the english muffin into halves, and soak in the egg&milk mixture, flipping to soak both sides. Cook in a small pan over medium high heat until browned on both sides.

Top with greek yogurt and syrup, and enjoy!
